Prep Time: 20 minutes
A quick delicious side dish or a light snack!
2 Tbsp apple cider vinegar (*Bragg Organic) or for a sweeter flavor (*Spectrum organic Balsamic Vinegar of Modena)
2 Tbsp olive oil (*California Olive Ranch)
Salt and Pepper to Taste
1 large jar Beets (*Othentic Organic shredded red beets)
1 large apple; Gala, Fuji or Granny Smith (*Organic)
1/4 Cup Crumbled Blue Cheese, or Feta (Organic Valley)
Make dressing: Whisk together vinegar, and olive oil. Season with salt and pepper to taste. Set aside.
Rinse and drain beets and put into a medium bowl.
Cut apple into sticks or thin slices or you can grate it, add to bowl.
Toss beet and apple slices with dressing, coating well. Top with blue cheese or Feta.
