Snuggle up to a nice hot bowl of healthy comfort food.

1 Tbsp canola oil (*Spectrum)
1 organic onion, chopped
2 clove organic garlic, minced
2 organic carrots, chopped
2 tsp chili powder (*Simply Organic)
1 tsp ground cumin (*Simply Organic)
4 C vegetable stock (*Imagine Natural Creations)
2 (15 oz) cans black beans, rinsed and drained (*Eden Organics)
1 (8.75 oz) can whole kernel corn, drained (*Field Day)
1/4 tsp ground black pepper (*Simply Organic)
1 (14.5 oz) can stewed tomatoes (*Muir Glen Organic)

In large saucepan, heat oil over medium heat; cook onion, garlic, and carrots, stirring occasionally, until onion is softened, about 5 minutes. Add chili powder and cumin; stir until mixed well. Add stock, 1 can of the beans, corn, and pepper; bring to boil.
Meanwhile, in food processor or blender, puree together tomatoes, with juice and remaining can of drained beans; add to pot. Reduce heat, cover, and simmer for 10 to 15 minutes or until carrots are tender.
*Note: You can substitute canned black beans with dry black beans, just follow the directions on the package to cook.
Use 4 cups cooked, drained and rinsed black beans to substitute for canned beans.

*Garnish with a dollop of sour cream and chopped green onion.
