This easy to prepare treat is not only delicious and fun to eat, they are packed with omega 3 and 6 fatty acids, fiber, protein, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Manganese and Selenium. They also have vitamins, A, C, D, E, K and B vitamins.
Pre-heat oven to 275
Line a baking sheet with parchment paper
1 cup cleaned seeds
1 tbsp. organic olive oil
½ tsp. sea salt, to taste or other seasoning of your choice.
Pull all the seeds out of your squash
Rinse with water and remove all pulp. Pat the seeds dry and place in a small bowl. Stir in organic oil and seasonings. Spread on parchment lined baking sheet.
Bake for 15 minutes or until seeds start to pop. Remove from oven let cool.
