Makes a delicious Vegetarian main dish or a great side for Chicken, Beef or Pork.

1 tablespoon olive oil

1 small organic onion (chopped)
2 cloves organic garlic (chopped)
1 bunch organic spinach (roughly chopped, stems removed)
1 cup quinoa

2 cups vegetable broth, chicken broth or water
(*Imagine Natural Creations)
salt and pepper to taste
1 organic lemon (juice and zest)
1/4 cup crumbled feta
2 organic green onion (sliced, for garnish, optional)

Heat oil in a pan, add the onion and sauté until tender, about 5-7 minutes.
Add the garlic and sauté until fragrant, about a minute.
Add the spinach and cook until it wilts.
Stir in the vegetable broth, quinoa, and season with salt and pepper, bring to a boil.
Reduce the heat, cover and simmer until the quinoa is tender, about 20 minutes.
Remove from heat, add lemon zest & lemon juice to taste, mix in the feta and garnish with green onion, serve warm.
